SENSORY RESEARCH: TASTE & FLAVOR
In Fall 2022 the OSU Bigleaf Maple Project research team was awarded a 2nd grant that included funding for sensory research on taste and flavor of bigleaf syrup and other bigleaf sap-based foods. A summary of research results will be added to this webpage as they become available. The first results are expected in early 2023.
If you are a northwest syrup producer of bigleaf or walnut we would welcome receiving samples for our research. One of our objectives is to look at geographic diversity of flavors. The "Contact" page has an email you can write to introduce yourself and get instructions on how and where to ship. We can pay for postage and provide you 50ml test tubes that are safe to mail.
